    I love to entertain, which often means hosting friends and family at my place, or heading over to their homes and offering my hand in the kitchen. With the warm weather in spring and summer, there are few things better than creating a taco party where diners can help themselves (bonus: a little less work on your part!).

    Not only is this type of casual, healthy, unfussy dinner delicious, it encourages conversation around the food on the table.

    It’s always fun to learn how my friends and family members are cooking and eating. A lot of us are eating for increased performance in our sports of choice, increased energy throughout the day, while many of us are just trying not to catch a cold. One thing we all have in common? We want the healthy food we cook, eat and serve to taste great.

    There’s no room for a bland meal in our diets. We’re a bunch of food lovers; food lovers who love to cook, experiment in the kitchen and incorporate the hot new superfood ingredients into our recipes.

    My friends, family and I all agree that cooking at home will always be the healthiest, most economical option, and having tacos boosted with a decadent avocado sauce gives us that creamy richness we’re all craving on our tacos.

    If you’re similar to us, you’re looking to keep enjoying the foods your love, with a few extra health benefits thrown in, too. Fresh, vibrant and bursting with probiotics, vitamin A and E, healthy fats, fibre and whole grains, your Cinco de Mayo party just got a bit more interesting with these vibrant tacos.

    Of course, a taco party without the taco accompaniments just wouldn’t be right. For a true fiesta, I make sure to incorporate a variety of salsas, lean proteins (chicken, beef or black beans), limes, baked tortilla chips, cilantro and a few jalapenos for those that like it hot. This type of meal is wonderful to linger over and catch up on a weekend afternoon or evening. And while you can use this taco recipe to entertain, it comes together in under 30 minutes, making it weeknight friendly, too.

    It doesn’t need to be Cinco de Mayo to eat these super-easy (superfood!) tacos. Try them as a meatless Monday option; enjoy a few on a Friday night while watching a movie; or pack for lunch and assemble at work or school – the sky’s the limit this meal.

    Broccoli Tacos with Bio-K Avocado Crema

    These whole veggie tacos are packed with greens, healthy fats and probiotics. Celebrate Cinco de Mayo healthfully this year with this unique take on classic tacos.

    Preparation Time: 10 minutes

    Cooking Time: 5 minutes

    Serves: 4

    Ingredients:

    Bio-K Avocado Crema

    1 Bottle Bio-K Original

    1 small avocado or ½ large avocado, flesh only

    2 Tbsp lime juice

    ½ clove garlic

    ½ tsp coriander seed

    ½ tsp ground cumin

    ÂĽ tsp sea salt

    Tacos

    8 small corn or whole grain tortillas (2 per person)

    1 head broccoli, cut into bite-sized pieces, steamed, and finely chopped

    Salsa

    Hot sauce

    Instructions: Add all ingredients for the avocado crema to a blender or food processor. Puree until smooth and creamy. Transfer to a bowl, cover and refrigerate for until ready to serve or up to 3 hours.

    Fill tortillas with broccoli and salsa, and top with a generous portion of avocado crema. Finish with hot sauce and serve immediately.

    Tips: Boost the protein in these tacos with cooked chicken, beef, fish, tofu or black beans.

    This recipe is perfect for quick weeknight meals or as part of larger spread when entertaining.
